“Peanut Pork” is called Kare Kare. From what I heard, it was the Filipino attempt at curry hence the similar sounding name. The Shrimp paste (called “Bagoong”; pronounced “bago” as in “bag” and “ong”) adds a salty Umami flavour to the creamy but sometimes bland Peanut sauce.
