I bought bananas and turned my back for like five minutes and they were black, so that means banana bread time! People turn to the banana bread in times like these because it’s easy. Yeah, this is Stella, so easy isn’t going to happen. But it’s worth it.
This was probably the best banana bread I’ve ever had and I’m a tough critic because I’m not necessarily a fan. I did toast the sugar! Maybe that was the main difference? That and the addition of the yogurt I think really made a difference.
It needed to cook for about 15 minutes longer than the recipe states, but I started off with it covered loosely in foil because I hate when the top gets overcooked, so that could have slowed it down a bit. I also added chocolate chips in place of nuts because it’s just better that way.
I’ll probably make this again without the toasted sugar just to see what the difference is. And I’d totally recommend making this for when your bananas turn on you (and they will).
