Salad: 400 grams mixed cabbage, orange bell pepper, carrot, radish, jalapeno, and cilantro pre-dressed with lime juice and rice wine vinegar (about 110 calories), 2 hard boiled medium eggs (120 calories), homemade dressing including 1 tbsp peanut butter, 1 tbsp fish sauce, 1 tbsp soy sauce, 1 tbsp lime juice, 1/4 tsp thai chili flakes, 1 tbsp water (about 120 calories). Total: 350 calories.
I’ll often have a ~200 calorie snack between lunch and dinner, but I didn’t today.
Eggs: 1.1 oz sourdough bread (85 calories), 3 oz sweet potato (75 calories, rubbed with a tiny bit of butter and salted – not counted), half tablespoon butter (50 calories), 1/4 cup cottage cheese (50 calories), 3 medium eggs (180 calories), dressing, kale, sauerkraut, and beets (~30 calories). Total: 470 calories.
Note: I learned about cottage cheese eggs + roasted sliced sweet potato from I_like_it_yo’s post and I’ve been having it almost every day.
