Hubs had a hankering for chili this evening.
RECIPE
2 tbsp olive oil or vegetable oil
2 medium onions, diced (white or yellow)
1 green bell pepper, diced
1-2 jalapeños, seeded and diced
3 cloves garlic, minced
2 lbs ground beef, 85% or 90% lean
2-3 tbsp high quality chili powder
1 tbsp ground cumin (or more)
2 tsp ground coriander
1 tsp dried oregano
1 15 oz can light red kidney beans
1 15oz can pinto beans
2 15 oz cans diced tomatoes or 3 10 oz cans RoTel tomatoes, with juice
3 cups water plus 1 tbsp Better Then Boullion beef
Salt and pepper to taste
For serving:
Diced jalapeño
Diced red onion
Finely shredded cheese
PREPARATION
Add oil to large skillet and heat. Add onions, peppers, garlic and ground beef to skillet. Cook until beef is no longer pink. Drain the cat if desired.
Rinse the beans well. Add everything to a slow cooker set to high for 3 hours or low for 6 hours. I usually put it on high for an hour then low for another 2-3 hours for convenience.
