    Jollof is a precursor to the Southern (read Gullah) dish of red rice. Red Rice as we know it in the South is descended from the cultures of West Africa where the slaves were taken from and the community that remains closest to those roots is the Gullah Gee-Chee communities of the Sea Islands in North Carolina, South Carolina, and Georgia.

    If I didn’t know already I’d swear this was a plate of Caribbean food (DR, PR, Jamaica, etc…). Looks delicious.

    And yes I do know that that’s not a coincidence. Its just interesting to see how similar lots of our dishes are. Like I can look at this and clearly see how heavily it influenced the dishes I grew up with and love.
