    Here’s the recipe I mostly followed:

    I swapped the beef for 3lbs of chicken (I did 1lb chicken thighs and 2lb breast because I wanted it to be fattier). I also used fresh herbs instead of dried herbs because I like the taste better (4x as much fresh herbs as dry herbs). I omitted the rolls, butter and cheese because I’m not eating those right now but you could put this on a sandwich and with cheese and I bet it would be even better!

    I did not pre-sear the meat because chicken overcooks easily. Place the chicken at the bottom of a slow cooker or instant pot and then follow the recipe.

    I cooked it on low for 5 hours in the crock pot and the meat came out a little dry. Maybe try 4 hours on low, then shred the chicken, and if it’s still not cooked let it go a little longer. And let me know if you figure out a good amount of time to cook it! Most slow-cooker chicken recipes I looked at said 5-6 hours on low, so it is possible my slow cooker runs hot (it was $10 from goodwill).
