My spouse and I have been craving lump crab cakes. We live in a coastal environment where half a lb of lump crab meat has been in the price range of $20-$35. A month or so ago, we went to our local farmer’s market where a vendor was selling a variety of homegrown mushrooms, including lions mane. We bought 1/2 a lb of it for $10 after the vendor recommended a lions mane “crab cake” recipe by “Aubrey’s Kitchen”. After cooking up the recipe once, we were hooked. I’ve tried canned crab to save money on crab cakes as well but I wasn’t a fan of the texture. The lions mane texture satiates our crab craving!
Today I pan fried them in Trader Joe’s jalapeño lime & onion crunchy oil and added cilantro from my garden to the recipe vs parsley. On top, I added a pesto aioli. For 8 cakes, I used 1 lb of Lions Mane mushrooms for $20. I’ve seen them a little cheaper per lb at the grocery store but do enjoy supporting our local vendors.
