1. Bring a pot of water to a boil. 2. Carefully add eggs to boiling water and boil for 4-5 minutes. (This is for soft-boiled eggs; add more time if you desire “harder” eggs.) 3. Transfer boiled eggs to a bowl of ice water to stop from cooking. 4. Meanwhile, toast the bread; spread with softened butter. 5. Peel the eggs, being careful not to break them open. 6. Top each buttered toast with one soft-boiled egg. 7. Use a butter knife to break them up and “smash” them around the toast slice. The yolk should be fairly runny. 8. Finish off the smashed toasts with a dash of salt and pepper, along with chopped fresh herbs, if desired. Enjoy!
