Ok, so I eat this four times a week at work. I love it. Works for me. Lunch is not my problem when it comes to me eating over my budget.

Most of the sodium comes from the noodles- I’m looking for alternatives like rice ramen. I love glass noodles in this.

I’ll use konjac noodles and have a tablespoon of peanut butter or two instead as well.

I work in an office building where I have minimal coworkers and can keep frozen veg and protein in the freezer as well as stock in the fridge. I keep pantry items and spices at my desk. I cook the ingredients in a hot pot- it just sinners while I continue to work or if I’m in a meeting.

I find this very filling for a couple hours, could benefit from a fat source, think that will keep me fuller longer. I tend to get peckish around 3:30pm and I eat about 1230. I have melon for snack.

Just ideas for lunches if you’re able. I’ve made little individual soup packs before too and keep them in the freezer, all ingredients for one lunch (minus broth) in one bag.
