Doing monthly eat down/pantry clean out and found Bobs Red Mill Multi grain pancake mix I forgot I had from my eat more while grains kick about a year ago.

Didn’t want to make pancakes and IRCC even though it’s labeled waffles it made lousy waffles.

Wanted cinnamon rolls but also didn’t want to fuss. Thinking about the mix ingredients made me think perhaps I can make a coffeecake with it.

And yes, you can. Based off a countrycook blog post with some modifications on stresualtopping and spices. (Link in comments) Had leftover Rhodes cinnamon roll icing from their frozen cinnamon rolls from Easter so I used that. Any powdered sugar glaze would work.

Notes:

There’s two types of pancake mix, the kind you add water to, and the kind you add egg, oil and milk to. I had the second type, so recipe below is for that type of mix. See link for the water only recipe.

I also don’t keep sour cream on hand, and use Greek yogurt instead. If you don’t like yougurt and do keep sour cream on hand instead, use sour cream. My recipe reflects my kitchen inventory.

I use cardamon a lot more than cinnamon. So my recipe reflects my spice tastes. You are free to use just cinnamon if that’s more your taste or kitchen inventory.

Lastly, the streusel topping I made with butter (margarine if you are on budget) oat bran I also found in my cupboard, walnuts I found in freezer and my spice blend with sugar. You can either use quick or regular oats, leftover pancake mix, solid fat like butter or margarine, and leave out the nuts if allergies or you don’t have them. I used white sugar because I make my own brown sugar as needed with molasses and white sugar and I need more molasses. It turned out fine. My recipes reflect those change. Recipe:

2 1/2 cup pancake mix

1/3 cup sugar

1 tsp cardamom

2 eggs

2tableespoons of milk

1 tsp of vanilla

1/2 cup of plain Greek yogurt

Strudel topping

1/4 cup oat bran or pancake mix or regular or quick cook oats

2 tablespoons of cold butter or margarine cut into small cubes

2 tablespoons sugar

1/4 cup walnuts chopped ( optional

1 tsp of cinnamon

1/2 tsp cardamom

Pinch of nutmeg (1/8-1/4 tsp? I eyeballed it)

Pinch of salt

In a bowl stir the first three ingredients together. Add eggs, milk, vanilla and Greek yogurt mix with spoon until while combined and now dry spots remain. The batter will be very thick as you stir and a little tough to work with, but it will come together into a thick batter. Spoon into a greased 8×8 pan.

In a small bowl stir sugar, oats, salt, spices together. Cut in butter in butter with fingers until you get a nice crumbly mixture similar to wet beach sand. Sprinkle over top of cake batter. Sprinkle nuts on top of streusel. Bake in preheated 375 F oven for 25-30 minutes until top is golden brown, and toothpick comes out clean. ( Mine took 33 minutes)

Optional glaze

1/4 cup powdered sugar
2-3 tablespoons of milk
Optional- 1 tsp vanilla extract

Stir milk, sugar and extract together until smooth.

Top with optional powdered sugar glaze while warm.Allow to cool in pan for 10 minutes before serving.

    Taste:

    It’s a keeper. Would a get out hand mixer and all ingredients and mix by hand be better? Yes, but a) not a baker, and not on Great British Bake off b) used up a bunch of bits and bobs like pancake mix, few walnuts and so forth, so I m well chuffed about that.
