8 chicken thigh, most of the fat trimmed off
each chicken thigh seasoned heavily on both sides with salt, pepper, paprika, oregano, onion powder, garlic powder
1 can chipoltes in adobo
3 onions cut into wedges
2 cans diced tomatoes
salt, pepper, oregano
2 tablespoons of cooking oil
add the onions and chipotles to the crock pot along with oil
use a spatula to separate the onions, smash the peppers
add tomatoes and mix together
add salt, pepper, oregano
Season the chicken on both sides
stir everything together
set on low for 5 hours
