Hey all,
A while ago I tried the double caramel flan ([this recipe](https://www.seriouseats.com/double-caramel-flan-recipe)), and while it tastes delicious it set into two disincentive layers. One denser and creamier and one lighted and more jelly like. I wish I still had a photo, but I don’t.
I followed the recipe to the letter so I’m not sure why it happened. Any help?
