
So I don’t know if this is common knowledge, but I thought I’d share. You can pick the new, pale green growth from spruce trees and make delicious syrup from them. Very earthy, citrusy flavor. Good with game or desserts. I am mostly making it for drinks.
I will add an image when it’s done, but basically you pick about 5 liters of spruce tips. You add water so they are covered and leave oven night.
Then you bring it to a boil (like in picture, they turn creepy moss green when cooked) and cook for 2 hours on low. Drain, add 1/2 kg of sugar for every liter of “spruce stock”. Simmer for another 2 hours or until desired consistency. (Mix every once in a while or it will burn.)
Put the hot syrup in clean canning jars and close lids. Let cool and store in the fridge or a cellar.
