Looks like it was mixed at high speed with pancake batter and then poured on a flat top.

That looks like it was made with boxed liquid eggs. They haven’t been whipped and therefore have no air in them which is why they look so flat.
My bigger question is why not just a hard boiled egg(s) for your Greek salad, Why a plain omelette?
I’m just thinking about ease of prep, and cook time here.
