    You can get creative with the ingredients but I really just do kimchi+scallions, chives only, scallions only, zucchini+onions, scallions+squid/shrimp.

    Personally I like to rough chop kimchi into long but narrow pieces, chop the chives in 1-inch lengths, chop the leafy part of scallions in half, dice the bulbs of the scallions, and julienne the zucchini/onions.
    Also growing up my mom seasoned the batter with salt rather than dip into soy sauce.

    Keep the flame on medium, keep the batter amount thin to make it extra crispy and delicious! I love the edges the most 😍
