They may not look like much but this was a really fun experiment with using lentils which are a cheap source of protein!
1 pound lentils
2-3 cups stock or water (add more if needed)
1 tablespoon olive oil
1 chopped onion
Veggies of your choosing (I used spinach, zucchini and some carrot)
2 tablespoons curry powder (or to taste)
Sauté all veggies in oil until soft. Add rinsed lentils and stock, cook until lentils are tender, 20-30 minutes. Add seasonings and serve!
If you want this brothy like a soup, add more water. If you want it thicker like a chili add less!
