Doesn’t look like much and I’m not gonna lie, this started off as a puree for my baby, but then it was really good so I made it into a soup for myself as well. I have the habit of never measuring anything so I’ll approximate as best I can. Most of seasoning is optional, you could add or subtract to your own taste.
Ingredients:
4 small onions
1tbs butter or oil
1.5 cup red split lentils
1/4 cup peanuts
1/4 cup cream
3 cardamom pods
1tsp fennel seeds
1tsp coriander
1tsp curry powder
1tsp turmeric
Pinch of cumin
Salt to taste
Directions:
Sautee onions in butter over low heat
Boil water, add lentils, cardamom pods and fennel seeds
Add the rest of the spices, peanuts and cream to onions
Combine when lentils are cooked and onions have a nice bit of colour on them
Blend together and salt to taste
