SeriousEats recently put up a new saute pan review. I’ve never found much use for a saute pan but I know lots of people love them and some of their findings were interested.

What caught my attention was how they preferred middle thickness width pans over both thin and thick. In their testing the thinner pans like Tramontina and Calphalon had more uneven surface temps and dropped a lot more when food was added, thicker pans like Hestan and Demeyere heated up too slowly, while their top three Made In, All Clad, and Misen were in the middle and just right.

Strangely they dinged the All Clad for being the priciest among the top three but that is no longer the case, Made In prices have risen to be pretty much a wash with All Clad now, in fact on their websites the All Clad D3 Everyday saute pan is slightly cheaper than the Made In pan. Obviously the factory and slightly blemished type deals you can get it for much cheaper.

    Some people value responsiveness – others evenness. Personally, I lean towards evenness and the thicker pans.
