Okay, this may be a dumb question but… I made this chicken sausage dish the other night and the cream sauce just was *chef’s kiss*. It combated the acidity of the tomato just right and I want to make my own.

    I would have to guess some type of dairy based. Probably sour cream lol.

    I looked up a copycat recipe for it ages ago and this was the recipe I found:

    • 1-1/2oz (3 Tbsp) unsalted butter
    • 3 Tbsp unbleached all-purpose flour
    • 1-3/4 cups whole milk, heated
    • 1/2 tsp kosher salt
    • 1/8 tsp freshly ground black pepper
    • Small pinch freshly grated nutmeg
    • Heat on medium until thickened, be sure to whisk. Add additional flour if you need to thicken.

    It’s a simple roux or white sauce. Equal parts flour and butter, milk till smooth and season with salt and pepper. It’s the base for any sauce; you can add cheese, mushroom stock, chicken stock, etc and it makes gravy or sauces.

    It’s bechamel sauce. You can Google the recipe or find it somewhere on this sub. It’s super easy to make. There’s a Ragu recipe from home chef of Rachel Ray’s that I use it for. I’m not sure if the measurements but it’s milk, flour, butter and pepper. Make sure when you make it do it slowly. The first time I made it I just dumped the flour in and it was very thick
