I continue my Pokemon-esque quest to eat every ramen at Bluefin. Like the beef rib, this is pretty much the Red Tonkotsu with meat on the side.
So, if I was served this lamb shank on some artfully-piped garlic mashed potatoes and a veg on the side, I would expect it to be $25+ at a steakhouse. It is freaking delicious. I shredded it with chopsticks (it is fall-apart tender) and added it to the ramen.
While both this and the beef rib are a little more substantial that I’ll regularly eat (I’m still leaning Tan Tan as #1), they are for sure the most impressive things on the ramen menu.
