Thai curry soup! Recipe in comments

    Soup
    – 1 tbsp coconut oil
    – 2 chopped onions
    – 5 cloves of chopped garlic
    – 1 tbsp chopped ginger
    – 2 tbsp red curry paste
    – 3 cups chopped carrot (approx 5 carrots)
    – 3 cups chopped sweet potato
    – 1 cup chopped pumpkin
    – 4 cups vegetable broth
    – salt and pepper to taste

    Toppings
    – minced fresh coriander
    – fresh lime juice (we used one lime)
    – 400ml coconut milk
    – 2 tbsp peanut butter

    Instructions:
    1. Put everything for the soup in the slow cooker on high for 4-6 hours
    2. Blend the soup either in batches (in using a traditional blender) or using a stick blender
    3. Finish with toppings. We premixed everything together except the coriander
