Street corn, Mexico City. Does anyone know the type of corn this is? I really loved the texture

  1. That is Elotes (on the cob) or Esquites (off the cob) (my fav)

    I don’t think the actual type of corn matters; i think it’s just boiled?

    Those are Elotes ! boil the corn first ! also in the states if you go to the mexican stores they will make them for you 🙂

    They’re often just called elotes or elotes asados. If you are looking for a similar flavor of corn off the cob, those dishes are called esquites

    Pretty sure OP knows that’s an elote and is asking what kind of corn as in flint, flour, dent, pop, sweet, waxy etc.

    It looks like flour corn, based on the shorter cob, and larger kernels. Generally not great for eating, but can be very good while its still young
