I’m planning on making this recipe from J Kenji on serious eats:

My question is, would using a Dutch oven get a similar result instead of using the foil? I was thinking of doing the first part with the lid on and then at the point that the foil is removed just taking the lid off. Any thoughts/ suggestions are greatly appreciated.
