For a rib roast, most hardcore bbq people or foodies might say that is “slightly overcooked.”
However, if I made on that came out like that for a large function it would be perfect. My in-laws might still complain that it’s still “too pink.”

No, this is perfect. The ends are going to be more overdone but as he slices towards the middle it will get more rare. People can pick the slices they like.

Perfect. I do like it more rare, BUT I like this more, as rarer meat has a slimier consistency or mouth feel to me. This will still have the flavor and a touch more “chew” and feel less like you’re just eating meat off a fresh kill. Which I’ve done and don’t recommend.
