After asking for advice on the best conchas in Austin I decided to try Comadre Panaderia and while not the most authentic flavors, MAN it did not disappoint!! Will be ordering again!!!

Includes: raspberry and pink pitaya concha, matcha vanilla chocolate chunk concha, 2 potato egg and cheese empanadas with a delightfully spicy green sauce, green tomato and ricotta pastry with salsa verde, a masa galleta, and cherry chocolate gansito cake.
I think my favorite was the raspberry pitaya concha. Sweet and salty crunchy topping, light but substantial bread. Very close runner up was the ricotta pastry. Still drooling over this days later!

Out of curiosity, what do the “most authentic flavors” taste like?

That looks delicious!! I saw the menu and the gansito cake is vegan. I wish I ordered that this weekend. Shame they are only open sat and Sunday 😞

Better not disappoint when it costs 5x the usual panaderia

Anything Chef Mariela makes is authentic, because she is an authentic Mexican person. Let chefs and people experiment. It’s their culture. They own it.
There’s a fine line between appreciation of a culture’s beauty and what it has to offer vs fetishizing it and putting it in a box.
EDIT: I see you already addressed this. Cheers! I agree that their stuff is amazing, and the flavors are outstanding
