    **Brine Ingredients:**

    3 TBSP kosher salt

    3 TBSP Swerve brown

    4 cups water

    1 sprig fresh thyme

    1 smashed garlic clove

    **Ingredients:**

    2 – ¾” bone in pork chops

    1 tsp. onion salt

    1 tsp. garlic powder

    1 tsp. fresh cracked pepper

    ¼ cup carbalose flour

    Oil for frying

    **Directions:**

    Dissolve the salt and Swerve Brown in the 4 cups of water.

    Place the pork chops, thyme and clove in a Ziploc bag, pour in the brine.

    Seal the bag, burping out the air as you seal.

    Rest in the fridge for 2 hours.

    Drain the chops in a colander.

    **Prep The Seasoning:**

    Place the onion powder, garlic powder, pepper and flour into a paper bag.

    Add the pork chops to the bag and shake to evenly coat.

    Rest on a plate while the oil heats up.

    **Frying the pork chops:**

    Using a heavy cast iron pan or Dutch oven, heat about an inch of oil to 350°.

    Fry the chops to a crispy golden brown, flipping once.

    Serve warm with caulimac N’ cheese on the side.

    Chayote applesauce goes well with the crispy chops too.

    **Notes:**

    My oil of choice is a refined coconut oil
