    Pro tips –

    1. Salt the eggplant to remove water. Cut into 1 inch slices. Put salt on it in a colander. Let sit 20min, wash off salt, dry then chop for recipe.

    2. Use good tomato paste. The stuff in a can is junk. Picture 2 is the tomato paste we use.

    3. I add white pepper and chili flakes to add more spice.

    4. Don’t want it mushy? Cut bigger slices and cook it less.

    5. We top it with Burrata and serve with crusty bread.

    6. Leftovers make great lasagna filling.

    Mmmm. I made minestrone with similar ingredients yesterday, but now I think ratatouille will be next.
