    **Ingredients:**

    * 2 cups cooked rice (preferably leftover rice, as it fries better)
    * 2 tablespoons vegetable oil
    * 1 onion, finely chopped
    * 3 cloves garlic, minced
    * 2 red chilies, thinly sliced (adjust the amount based on your spice preference)
    * 1/2 cup cooked and shredded chicken or prawns (you can also use other proteins like beef or tofu)
    * 1 cup mixed vegetables (carrots, peas, bell peppers, and green beans work well)
    * 2 tablespoons sweet soy sauce (kecap manis) – This can be found in Asian grocery stores or online.
    * 1 tablespoon regular soy sauce
    * 1 tablespoon oyster sauce
    * 1 teaspoon shrimp paste (optional, but it adds a lot of depth to the flavor)
    * 2 eggs, lightly beaten

    * Sliced cucumber and tomatoes for garnish

    **Instructions:**

    * Heat the vegetable oil in a large wok or frying pan over medium-high heat.

    * Add the mixed vegetables to the wok and stir-fry for another 2-3 minutes until they are slightly tender but still retain some crunch.
    * Push the ingredients to one side of the wok and pour the beaten eggs into the empty space. Scramble the eggs and cook them until they are just set.
