Can you replace red wine with dry apera/sherry in a ragu sauce in lasagne?

I am trying to make this lasagne recipe ([https://www.recipetineats.com/lasagna/](https://www.recipetineats.com/lasagna/)). I have apera in my pantry as I bought it to make stroganoff. It may be sacrilegious, but I do not want to buy another bottle of liqueur especially when I don’t drink as I hate the taste of alcohol in general. haha. Any advice will be helpful. 🙂

The recipe does say to replace the red wine with water, but I was just wondering if I could just use the apera.

\*-For those that aren’t aware of what “apera” is – it is the Australian sherry after some EU shenanigans made Australia unable to use the term ‘sherry.’

    i’ve never tasted sherry before but with what i saw on the internet i would problably mix it with some water as it seems that its taste would be too strong. just make sure to use it to deglaze the meat and not just adding it as if it was just another ingredient. i see this mistake way too many times even from italians.

    Just try it. Many wonderful dishes were made through experimenting. I personally would avoid heavily, overwhelming sweet wines because it feels like it might overshadow the rest of the sauce. Anyway – if you really think it could work – try it.

    You won’t taste the flavor of alcohol and the actual alcohol will evaporate, so I’d suggest to try it at least once!

    You can replace the wine (can be either red or white) with some water (it’s the stage before you add the passata or tomatoes) or just add the passata when the minced meat has browned.

    Please note that there is an official recipe for ragù bolognese and while there are some big ‘no-no’s’, just experiment a little and make your own favourite recipe.
