Two meals for two people. Cheap and simple. I have yet to really master making tortillas so I bought these. Just under $7. Pressure cook half the beans. No need to soak. I forgot I had roasted garlic, (6-8 garlic cloves in each baggy), so they were set aside. I go with the motto of “you can never have too much garlic. I bet you were wondering what that cucumber was for. While the beans were cooking (about 30 minutes) I sliced it, and was going to eat it with S&P and some vinegar. My MIL recently made it but added some mayo, sugar and dill. Who can argue with an 82 year old 🤷🏼‍♂️. Beans were done so I added tomatoes from my garden along with the garlic and 2 TBS of bacon fat, after I drain them. Let it simmer for a bit. 😍. Added S&P and some onion powder. That’s when I remembered to cut up some onion. My wife doesn’t care for raw onion (odd) so I fried them up. This is my new method: Cheese in the pan with the tortilla on the cheese, beans on the tortilla, add a little cheese and some onions. Flip and repeat with the cheese. Normally I would have cooked these longer so the tortilla would be crispier. But I was hungry. Topped with the star of the show, beans! Second round I made an easy taco. Fried like the way my mom did it back when I was a kid in the 70s. A fat bean taco. Oh, I also added Tony C’s (Google it, I cannot spell it) because that is good on everything. Now, I need to try and not eat the rest of the beans before my wife gets home for dinner
