Preparation
- Trim the zucchini but do not peel them. Cut them into 1/4-inch cubes. Put the noodles in a saucepan with salted water to cover and cook to the desired degree of doneness.
- Heat the oil in a skillet and add the zucchini, salt and pepper. Cook over medium-high heat for about 2 minutes. Add the garlic and cook 30 seconds; do not brown. Set aside.
- When the noodles are ready, drain quickly but thoroughly. Spoon the zucchini and cheese over them and toss quickly. Serve immediately.
