First picture is dough i made today using no extra flour. 2nd picture ISNT my pizza from yesterday but is a good example of what the crust looked like with all the extra flour i added, as I didn’t take a picture of my sad pizza yesterday.
So I have TWO questions.
So I’m a complete beginner and tried making Kenji’s new york style pizza dough. I don’t have a stand mixer so I had to do it by hand.
My first attempt yesterday was awful, the dough was really sticky and I poured some more flour on it so that I could work with it better. Eventually it was easy to work with it and I thought, “great!” Turns out it wasn’t great.
When it came out of the oven the crust was tough, dense, and crunchy. I wasn’t sure what was wrong with it but after looking some stuff up I think I realized the problem. I added to much extra flour.
I have sinced learned that the proportion to water and flour is extremely important and just haphazardly pouring bread flour willy nilly as a crutch to help with the kneading process is a BIG no no.
So today I put my big boy pants on and put 1/2 cup less flour in the dough, and then used the remaining 1/2 cup to flour my surface, making sure under NO circumstances would my dough be over floured (if that was even the problem I still am not sure).
FIRST QUESTION: Before I put this dough in the refrigerator to proof I was wondering, does it look okay? Like it’s supposed to? It (barely) passed the window pane test after I let it rest. It’s still sticky to my hands but not OVERLY sticky.
SECOND QUESTION: Is the problem with the 2nd pizza too much flour? I’m asking because that’s what my pizza looked like yesterday and if that ISNT the problem then I need to know what it is before I try making TODAYS pizza again.

TLDR; In the first picture does my dough look okay? In the second picture, is the problem with the pizza too much flour? My crust looked exactly like that yesterday.
