Okay, so I was asking all y’all what to do while it was thawing.
I cut up the veggies and I realized I had two measley carrots, but who cares, I threw them in!
I got like… 6 potatoes and then got two more. So many potatoes. Oooooooh yaaassss.
I cut up the meat, look at that beautiful marbling!!! So beautiful!
Look at that browning, so good. I cooked the meat with lard cause I was like… Flavor!?
I realized I didn’t soak the mushrooms while the second batch of meat was going, so I started that up.
Look at that meat fond!!! I scraped it up while I was stirring the beef cause I was anxious about burning, so there isn’t as much as there was. I don’t care, it all went back in!!!
Put in the onions and I realized the fond wasn’t coming up so I put in about… Two tablespoons of red wine. It worked well for the purposes here.
The mushrooms mid soak, yum.
The onions browned a bit, I didn’t want to go too far so thats what I started putting in with. Probably could have gone further.
Everything piled on top, looks sooooooo good.
Put in the sauces and half the thyme (I dropped the bag of bayleafs so I forgot about them at this moment, just put one in while writing this)
