Beer/Vodka Battered Cod on a Toasted Potato Bun with Tartar Sauce and Crispy Chips

    **Thrice cooked Chips**

    * Sort potatoes for even cooking
    * Peel and keep in cold water
    * Cut into thirds longways
    * Cut the sides in half and the middle in thirds
    * Rinse and store in cold water
    * Add 4 liters of water to a large pot
    * Carefully add 1 tsp lye water to the water
    * Bring the water to a hard boil
    * Gently add potatoes
    * Return to a soft boil and reduce heat
    * Start timer when boil returns
    * Gently boil for exactly 8-9 minutes
    * Carefully transfer to ice water bath
    * Preheat deep fryer to 170C/340F
    * Air dry chips on a rack while oil heats
    * Fry in small batches for 3 minutes and rack
    * Preheat deep fryer to 190C/375F
    * Fry in small batches until very golden

    **Beer Batter**

    * 140g self-rising flour
    * 2 tablespoons rice flour
    * 1 teaspoon baking power
    * 250ml Beer
    * 60ml Vodka

    **Cod**

    1. Thaw and dry the fish completely
    2. Heat oil to 190C/375F
    3. Season fish with salt and pepper
    4. Dust fish with rice flour
    5. Mix Batter
    6. Batter fish and cook until golden
    7. Drizzle extra batter over the top as soon as you add to oil

    **Tartar Sauce**

    1. Quality Mayo
    2. Minced gherkins
    3. A little stone ground spicy mustard
