
It happens when I thaw it from freezer (according to bag instructions)… every time. Like it tastes fine, Ill eat, but I wish it wasnt splitting. And its not from overcooking since it happens during thawing. Would appreciate insight! Thank you!

Could they be freezer burnt? Freezer burn would dry them out and make them split.
The water inside the tteok causes them to split in the freezer, best don’t put them in the freezer

I think this is just something that happens when freezing, especially with some store bought tteok.
Or at least it’s very likely to happen while freezing.
Maangchi has a recipe for ddeok/tteok that uses the microwave, but does need to be stirred like 100 times to knead it. You could probably just knead it for a bit. You could also pound it in a mortar and pestle if you have one. But 100 times seems to be the magic number for Maangchi.
But it’s fairly simple, just have to get the specific rice flour, add water and a pinch of salt, and microwave.
Definitely because it is frozen tteok. If you are lucky to have a korean market nearby, they usually carry fresh tteok, which can really elevate your dishes.
I also use frozen tteok and I think soaking them in water for 10-15 minutes before cooking helps-doesn’t completely stop splitting though, just reduces it for me
I’ve found that to keep the frozen tteok from not splitting is to 1) make sure they’re vacuum packed when freezing and 2) soak them in water for like 15 minutes before cooking.
I really wish I had a source for fresh tteok locally, because fresh is so much better than any of the frozen or refrigerated kinds I can get in the Korean grocery stores here.
