Salsa chicken, black beans, and rice

    So this is actually 2 different recipes; both done in a crockpot with rice done in the rice cooker.

    Salsa chicken we made last night for tacos, and today i made the beans to have with leftovers

    **salsa chicken**

    5 lb chicken breast (thigh works better, but breast was on sale for a very god price and inflation’s a bitch)

    taco seasoning. I used 3 packets of premade taco seasoning that I got on sale for dirt cheap, but you could make a spice rub with salt, pepper, cayenne, paprika, garlic powder, onion powder, msg, corn starch, and chili powder.

    half of one large brown onion cut to strips

    about 1.5 cups of pico de gallo ( i think a lot of people hate this recipe because they use shitty pace salsa or something else like that)

    about 1/4 cup of sambal oelek or some other chili paste/sauce

    whatever amount of garlic you want

    cook on low for 4-5 hours

    remove and wrap just the chicken in tinfoil for 30 minutes, then shred and put mack into the crockpot with juices for 30 min

    **black beans**

    1 lb black beans rinsed and sorted

    4 cups vegetable stock

    2 cups water

    onion powder, garlic powder, cumin, cayenne, oregano (mexican oregano if you got it, but i didn’t), salt, pepper, and msg

    3 bay leaves

    1/4 fine diced brown onion

    garlic

    cook on low for 6-8 hours.

    **Rice**

    Use a rice cooker and do what it tells you to do.
