Fallen in love with the style visiting Hiroshima, didn’t find so much about making it at home.
1×1 mm chūkamen, on my Imperia pasta machine attachment resulted in slightly thinner noodles compared to the ones I had in Hiroshima…I wonder what cutter do they use, 1.25 mm?
The “tare” was not enough to fully cover the thin noodles, I should try adding more tahini next time.
Overall was good, had a dinner of 9.

Specs:
1×1 mm ramen_lord mazesoba chūkamen
Beef and pork soboro
Ramen_lord tantanmen tare (with some water, same amount of the tahini paste)
Lots of green onions
Spice mix
Sansho

On the side, onsen tamago and then some rice to finish the sauce.
