

Recently I’ve figured out that, for me it’s easier to draw latte art on moka or Matcha then on cappuccino or espresso based drink.
The milk seems to flow so much nicer. When I do it on my cappuccino, it is SO hard to « push » the milk, and create a round warping shape.
I can’t replicate the pattern you see in the picture on cappuccinos. But hot chocolate or moka it work just fine.
Is my expresso too dense ?
Not enough water ?
Would appreciate the guidance

No that is just standard, the chocolate mixed with coffee gives a more contrasted canvas and has a bit of a smoother surface so the art almost glides out of your jug onto the coffee. Just is how it is.
Also cappuccinos have thicker milk so of course you will struggle a little to push out the art
My first guess would be:
The viscosity of the matcha and mocha base is different than an espresso base and can carry you milk easier which is a bit thick to the eye.
Try steaming your milk a bit thinner, swirling the espresso before pouring and then starting your pattern a bit earlier in the pour, about 1/3 full.
Unless you’re working with a really dark espresso, the crema shouldn’t be that hard to work with, but if you start pouring too late, most of the surface will just be milk foam that is already starting to set.
