I have done this app, and it is good. However, I have some ethical misgivings. The fat on the prosciutto is the best thing about it, and to render it seems like a mismatch of priorities. Perhaps if the asparagus was broiled with a little duck fat, then wrapped with proscuitto after it came to room temp, the best of all possible worlds could be achieved. That said, no one provides better, easier, and more consistently great recipes that Chef John. I will endeavour to do a side-by-side test when the asparagus comes up.
I sliced it in quarters and sprinkled cracked black pepper over the top. Thanks Chef! I've been using your recipes since 2016 and still going strong! Always delicious and always have a crowd favorite for potlucks

love asparagus but not always in season, so i buy them frozen sometimes, any advice how to prepare from frozen, for this recipe and/or others?
