


I am new to canning and I’ve done pickles, jam, beans and chicken stock with success. I did blueberries yesterday, hot packed with filtered water. After processing the liquid in the canner was blue and some of the jars were missing liquid. I did the finger tightening as I have done before. Even the full jars still had bubbles. I followed the directions and added a half cup water first, then berries then water. Used the tool around the edge to remove air and left half inch head space. I haven’t checked the seals yet since it isn’t time but the bands seem looser than past batches. If they are sealed are they good to store? Should I open and eat them now? Or do I dispose of them? Thank you!

Image 1 has some liquid gone, image 2 has more liquid gone and image 3 appears to have all its liquid but air around some of the berries.
If you followed a tested recipe and they sealed, they are safe. Looks like you had a siphoning issue. Here is a good article from the Penn State Extension about siphoning so you can try to avoid it next time: https://extension.psu.edu/why-is-liquid-lost-during-canning but sadly it sometimes just happens
It happens. Called siphoning. You are good so long as you followed a tested method.
