First time making this dish my Grandmother always made me.
I half winged it with leftovers and still came out great. the beans carry most of the flavor in this easy dish, you almost cannot mess it up.
Ingredients:
6 medium roma tomatoes (thickening and flavoring)
Half an onion
1 garlic head
1tbps of thyme or 2 bay leaves
Peprika pepper salt to taste
3 cans of black beans.
Half a can of water per can.
Slow cooked covered about an hour, mashed it and let it cook 30min uncovered to thicken more.
They viscosity should be like Curry, i used some flour to get the rest of the way

Almost forgot! Throw what ever meat you can in the stew. Usually Portuguese sausage, short ribs, fatty pork cuts like bacon.
I used turkey sausage, ground beef and pork sausage
Imma get some collards.
Did you use a Crockpot?
Make sure to eat an orange after to help with the protein digestion.
I use 1lb black beans, 1lb bacon, 1lb pork loin and 1lb linguista if I can find (else sweet sausage). Salt, pepper, garlic bay leaf and an onion.
I also use beef broth (have yet to find pork) instead of water
