
I’ve been preparing one dish a day (20 min or less) to add a new component to the plate each day for the last few weeks. So it’s always cycling and different!
Today:
-Spinach salad with cilantro verde sauce, blackbean kale mixture, pickled onions, corn, green lintels, peppers
-quinoa with lemon juice, great northern beans, red onions
-spiced red lentils topped w hemp seeds
-smashed tofu with carrots and sweet potato, topped w nutritional yeast
So lucky to have learn from this sub and feel so good from the way we eat!
