Not the best pic but I decided to make these yesterday after seeing them so much online and they are so good.
The way I did it is 473cal but you could easily drop it to 273cal by skipping the cheese and toasting the bread in a toaster instead of in olive oil. Negligible difference. I just love extra virgin olive oil toasted bread ❤️ I will probably skip the cheese next time since the pesto tends to cover it up, anyway.
My recipe:
Toast two thin slices of bread in 1 tbsp olive oil. I brushed on the oil so I could use less but evenly distribute it.
Add halved slice of cheese (I used Havarti) on top after flipping once so it can melt
Once done, place toast aside, make sure heat is low, add 1tbsp of pesto to pan and spread it around.
Crack two eggs directly into pesto, add chopped green onion over top, salt, black pepper, red pepper I cook mine for just a minute so the yolk is runny.
Now you add the eggs on the toast and its done! I scrape the pan of any remaining pesto to put on top.
