To assure myself that both meat and the cheese are hot and melty after toasting, I slip it in the microwave for 15 seconds or so.
My favorite cook making my favorite sandwich. I just finished making a batch of homemade sauerkraut. So guess what I am making this weekend. Gotta pick up some fresh rye bread and corned beef. I also love to get a Reuben at Hildebrandt's Deli in Augusta, GA when I am downtown.

Years ago at a cafe in a Kroger store in Peoria, Illinois they made a Rueben. She mixed the dryed well sauerkraut with thousand island dressing and placed the beef and cheese between the 2layers of buttered rye bread! I still dream of this sandwich! Ps. She mixed it up in the tin can, the kraut and dressing!😊
I don't eat meat, but I make a Rueben anyway. Dill rye bread, swiss cheese, extra sauerkraut. Yumm. I don't miss the original.

Excellent crunchy sandwich all time top 5…for a great variation try an open face piled really high with the swiss cheese top layer melted under the broiler, eat with knife & fork it's more like a meal not just a sandwich

The crucial difference between thousand island and Russian dressings is that proper Russian dressing is made with horseradish which complements the corned beef, and minced onion instead of relish which is a better compliment to the sauerkraut. Unfortunately at least here in Los Angeles, Russian dressing is hard to find so I end up having to make it from scratch. Worcestershire sauce, hot sauce, paprika, catsup, mayonnaise, minced onion and horseradish.
I know to make a Rueben sandwich but like watching videos on peoples take. This was best… a Rueben is simple not state of the art taking 12 minutes in some videos to show… really.! This was a simple good video on a simple recipe.
