I canned these beans back in January one jar is clearly much darker at the top. I’m assuming this means somethings wrong with that jar. but I’m wondering what you guys think.

Is the jar still well sealed? Open it, give it the sniff test…then throw away if you are the least bit worried. Better to lose a jar of beans than to risk it.
If it’s well sealed, and has no off smell…I’d probably dump it in a bowl and do a visual inspection….do I see any foam? Was there maybe a black bean in this bag of beans? If still doubtful then dump it.

I had this EXACT scenario. It was sealed but definitely didn’t smell right when I opened it. Regardless, I was not going to eat them lol. Not worth the risk for pennies worth of beans, thankfully one of the things that is still somewhat affordable.

I wouldn’t even open it. I’d slip the sealed jar in the trash and focus on what’s healthy and good. Who knows what airborne spores might be released in your kitchen opening it. Drop a dollar for the jar and save a fortune in your health.

If it passes all tests and has a good seal with a nice high pitched ping when you hit it with your fingernail and smells fine, cook it. Boiling foods for 15 minutes at 212 degrees will destroy any toxins present. But if you’re too worried, toss it. It’s just some beans.

Smell isn’t a reliable indicator of undesirable microbial growth of home canned goods.

Maybe it is a visual anomaly but the neck of that jar does not look right either. I agree that the product and the solution do not pass a visual inspection and should be trashed. Here is a WHO article about botulism that says that boiling 5 minutes or more destroys bot. toxins. But I would still get rid of it. So sorry that happened.
