Here’s an absolutely fantastic dish called pastitsada. This video will show you how to make a traditional Greek pastitsada recipe from the island of Corfu aka Kerkyra. This very easy Greek pasta recipe uses a few very common ingredients and is simple to prepare. Feel free to substitute beef for chicken and IF you can find it, free range rooster! INGREDIENTS LIST

* 6 chicken thighs (bone in, skin on)
* 450g buccatini noodles
* 1 onion
* 2 cloves garlic
* 2 tsp. ground cinnamon
* 1/2 tsp. cumin
* 2 cloves
* 1 tsp. cayenne pepper
* 1/8 nutmeg pod
* 1/2 cup red wine vinegar
* 1-1/2 cups dry red wine
* 28oz crushed tomatoes
* 28oz water
* 2 tbsp. tomato paste
* Salt & pepper to taste
