Serves 6-8:
14 cups homemade chicken stock
About 4 cups (or less) shredded cooked chicken
8 egg yolks
½ – ¾ cup fresh lemon juice
3 tablespoons corn starch
3 tablespoons olive oil
¾ cup uncooked orzo pasta
1 teaspoon salt, or to taste
½ teaspoon dried dill
Bring chicken stock and shredded chicken to a boil.
Add the orzo and 1 teaspoon of salt and boil for about 6 minutes. The orzo will be par cooked.
Prepare the egg lemon mixture by combining the egg yolks, corn starch, lemon juice, and olive oil in a boil. Whisk them together until smooth and the cornstarch dissolves.
Once the stock boils, add one cup of the hot liquid into the egg-lemon mixture to temper it. This will prevent the eggs from scrambling. Add 1-2 more cups of hot stock while whisking to incorporate.
Add the tempered egg lemon mixture back into the pot and cook over medium heat about 4 minutes until the soup thickens. Continue to mix it.
Add the dried dill and stir.
Serve immediately.

Can you freeze fresh lemon juice?🙋♀️
Very nice! I’m wondering if glutinous rice is used rather than orzo, it would thicken the soup the soup without adding a thickener like cornstarch? But I do love me some orzo! Thanks for sharing! ☮️🖖🏽
you should always add a little bit of tomato paste for color. much more appealing looking that way

I'm cooking up some chicken stock right now. I'm excited to make this soup. This is my favorite soup! I've only had it at a Greek restaurant in my hometown. I can't find it at any restaurants where I live now.

It's non traditional, the title should say "my take on avgolemono chicken soup"
My great grandparents came over from the boat from Greece and the way my grandma makes it is totally different! No comparison!
I live on soup (literally because I have trouble breaking down food in my stomach) this is going to be a nice change from my home made chicken soup! I ALWAYS have home made chicken stock in my fridge because I drink a couple cups of it everyday. I love adding lemon juice to my broth and soup at the end for freshness!

Looks Great. I like how you use just the yolks. You could get pepper in and get the heat by just using whole peppercorns in the initial stage when you are making the stock and then you can remove them.

I've made this before but I always do something wrong. Either too much rice/orizo, not enough crema. I'll try your recipe & let you know the results.
Yep, I made a big katserola, turned out perfect although a bit too lemony. Still, happy to have made it, brought back so many memories when mum used to make it.
