is there a benefit to pulling serranos when they’re green?

    They also get a bit of of sweetness to them when ripe. They may be slightly hotter but they taste less hot to me because of the added sweet flavor. That may be just me though. For canning, I prefer green as they stay crisp. When they are red, they get mushy, but I will throw a couple in for color.
