

Water bath canned some salsa last night using a doubled recipe from the Bernardin book. When I pulled the jars out after processing, they were more full then the required 1/2 headspace that I set them at. The salsa is touching the tops of the jars. I’ve never had this happen before but this is the first time I’ve used this salsa recipe. Is this normal or did water from the canner seep into my jars. If it did…is there anything I can do to save the batch? Is it garbage? Thanks in advance!

Heat causes things to expand. When they cool, the headspace will shrink. That’s why they do headspace to allow for heat expansion.

I had tattlers leak water into the jars. In my case I could see the water layer on top of the sauce layer. One of the reasons I gave up on tattlers… a smidge too tight and they don’t expel air… a scosh too loose and canner water floods in.
