Here’s an absolutely fabulous baked eggplant with feta recipe! This traditional Greek melitzanes sto fourno me feta dish can be found throughout Greece and is a family favourite. Whether you pick this dish as a side or as a vegetarian main, you will definitely impress your guests. Simply slice up the eggplants, prepare the sauce as shown, bake off and enjoy!!!! For best results, let the eggplants rest for about 15-20 minutes once out of the oven just to let all the juices reconstitute and set up. You can even make this ahead and bake before serving or completely cook and reheat.   6. minus alcohol, instead greek olive oil, use turkish olive oil. the rest is exactly same recipe in turkish version. in this case hi from turkey. well done.
